Getting Healthy!

I know that you are supposed to make New Year's Resolutions on January 1, but as teacher...our New Year starts in August! So in honor of my New Year, I have decided to join.....

I am super excited because I truly believe it will help me learn how to portion and eat healthier during the school year. I have to tell you the dinner I made the other night that was fabulous and only 7 points!!

Baked Chicken

1 spray(s) cooking spray

1 pound(s) Chicken, breast, raw, without skin & bone, four 4 oz halves

1/2 tsp table salt

1/4 tsp black pepper, freshly ground

1 tsp olive oil

2 tsp fresh lemon juice, or more to taste

2 tsp rosemary, fresh, chopped

2 tsp parsley, fresh, chopped

1/4 cup(s) canned chicken broth

1/2 medium lemon(s), quartered (for garnish)

Preheat oven to 400ºF. Coat a small, shallow roasting pan with cooking spray.

Season both sides of chicken with salt and pepper. Transfer chicken to prepared pan and drizzle with oil; sprinkle with lemon juice, rosemary and parsley. Pour broth around chicken to coat bottom of pan.

Bake until chicken is cooked through, about 30 to 35 minutes. Garnish with fresh lemon and serve. Yields 1 chicken breast half per serving.

AND........

Creamy Corn

2 tsp butter

1/4 cup(s) scallion(s), minced

2 1/2 cup(s) frozen corn kernels, or fresh corn (no need to thaw frozen corn)

1 Tbsp all-purpose flour

1 cup(s) fat-free skim milk

1/8 tsp table salt, or more to taste

1/8 tsp black pepper, freshly ground, or to taste

Melt butter in a large skillet over medium heat. Add scallions and sauté until soft, about 2 minutes. Add corn and sauté 1 minute to heat through (or slightly longer if using frozen corn). Add flour and stir to coat corn and scallions. Add milk and bring to a simmer.
Reduce heat to low and cook, uncovered, until mixture thickens, about 10 to 12 minutes; season to taste with salt and pepper. Yields about 1/2 cup per serving.

These two put together turned out to be such a yummy dinner! I am super excited about this journey and how healthy I will become!

In other news.....Kyle left Sunday for Birmingham, so I have been riding solo for 3 days now! Kyle is having a great time and has loved everyone he has met so far! I am gearing back up for school with 2 more meetings, then I will have to be there from August 8th on! I cannot wait to meet my new kids and get into a normal routine!!

Every Accomplishment Starts with a Decision to Try

So I could not be more excited for our dear friends Cheska and Brett!! They just received news yesterday that they are moving to New Jersey where he will be working in a church in the technology department! This is something they have really been praying about lately and this amazing door opened a few weeks ago. The Lord stepped in and took over the rest!! What an amazing journey to go on...

So here is a little history about Cheska and Brett and how we know them so well! Cheska is actually Kyle's best friend growing up. They have known each other their whole lives and have been close that whole time. Brett came around to our weekly game nights about 3-4 years ago. They had met at camp and she really wanted for the "game night crew" to meet him to see what we thought. Well, we immediately fell in love with him and his humor.

They have been such a big part of our lives over the past several years, and so we headed out tonight to wish our farewells to them as they prepare to leave! They are not leaving for 3 weeks, but since Kyle is leaving Sunday...we wanted to make sure and get our hugs in!!

Before I show pictures from tonight, I wanted to recap just a small amount of all the memories we have together! I could add hundreds of pictures, but I just added the main ones!!

We have had several exciting things happen over the past couple of weeks that I would love to share with you. First of all, as you all know Kyle did get into an internship in Birmingham, AL for the month of August. He leaves in two weeks to work under some amazing doctors there. We also just found out that he will be spending the month of September in Knoxville, TN interning with the teaching hospital there. You may be wondering what happened to Nashville, TN....he did apply there, but they already had all their interns booked for the month of September so they did not have room for him!! No worries to us, though, because Knoxville is a great town as well. The last and probably most exciting news is that Kyle just found out that he received a 4.0 in medical school!! YEA!!! Some of you may wander...as I did....how he knows that is what he will graduate with since he still has one year to go?!?! He knows that because in 4th year, it is pass or fail! He either passes his monthly rotations or fails them!! No more tests (other than a BIG one) and no more assignments....just interning!

As I am sitting on the floor writing this up, Kyle is sound asleep on the floor here in the den. These 4:30am mornings catch up to him sometimes and as many of you know...once he lies down...he is OUT!!!! He is in his urology rotation here at UAMS right now. He wanted to spend a month in it here before he left so he would be more comfortable and knowledgable when he went away for these 2 months. He has already got to help out in some pretty awesome surgeries and has met some great people that will help to influence his future.

As much as I hate to see him leave for 2 months, it could not be a better two months with my schedule! August and September are crazy months for teachers as we prep for the first day of school and survive the first month. I have meetings from August 1 on, so I am extremely blessed that he will be gone when I am my busiest. I know that time will fly by and that the Lord is giving me strength to get through this! I will update you on how his time is going there soon!

(Please let me know when you are free though...as I will try to fill every free moment I have hanging out with anyone!! I am not a loner!!! =))

One more thing...we will find out where his residency will be at January 23! They posted the date last week!! Be prepared for more updates as these next 6 months fly by!!!!

4th of July Celebration

I am so excited to update you on our fabulous 4th of July Celebration we had at the house! Since we are unsure if this is our last 4th of July in Little Rock, I wanted to have a party with some of our closest Conway friends! They came over for a cookout before we headed downtown for the awesome fireworks show!! Here is a look at the night...

We start of with the decorations for the party...of course everything had to be themed!!

I got creative with the batter and decided to marble it red and blue to add some flair!! The red part was strawberry cake and the blue part was white cake with blue food coloring!

Our First Big Purchase

Kyle and I made our first adult purchase yesterday! We bought an SUV! We have been talking about getting a larger ride sometime in the future, but now seemed like as good of time as any! We have been renting a Ford Escape every since Kyle got into his wreck! (He got hit by an ambulance...here's a pic)

After he got home....we had to rent a vehicle because his window was busted and his steps stuck out really far. I was so excited to be driving a Ford Escape because it has been a vehicle I have always liked and always wanted to drive. We took it home over Christmas and fell in love with it. The space was so nice....especially with Kooper and Kole taking up the backseat.

We started searching around and looking at used ones with the end of the year sales. We searched and searched and finally found a 2008 Ford Escape that I fell in love with.

This is my new SUV I will be cruising in from now on! I loved my civic so much, but the space seemed to be getting smaller and smaller!

It is a dark charcoal color called sterling gray!! In honor of my civic, Radie, my escape's name is Sadie!!

So goodbye to Radie....

A Tribute to My Twin

It was my freshman year...her sophomore!! We had no idea what would be in store for our relationship when we met that first Alabaster Dance meeting!! Who knew we would become best friends, d-group leaders, dancers, partners in crime, late night chatters, boy problem fixers, bridesmaids, and twins!! My best friend, Kristen Robinson, is getting married on August 7 and I wanted to reminisce our journey together!! Some of these are old and embarrassing, but it is what made us so close!! So we begin Fall 2005!!

I know I have been a little behind on the blog updating....so here is everything in the past 2 1/2 months all rolled up!!

June 7 - Last Day of School...Here is my classroom as I am getting ready to leave. I had so many great memories in here with my babies! They were each so special to me!!

It's all boxed up now and ready for Mtn. Springs in a couple of weeks!!

Week of June 14-18....I went and had lunch with one of my wonderful childhood friends, Kristin Duckworth during this week and she got me all inspired to be a little crafty...so here goes!

Add all of those products up and you get a pretty fun picture frame, which I gave to my mother-in-law as a late mothers day present!!

I also decided I would try one of Shanna Moody's projects I had seen her do on her blog! She took a piece of tile to create a picture. Kyle had one left over from when he redid our floors a year ago.

I had planned on using buttons on the "B" but it was too much, so I decided to paint over the "B" with glossy Mod Podge and stick a flower on it!! I love it!!

When we got back to the room we decided to try our cake from our wedding...and it was delicious! We cut the outer edge off and ate the insides! We were so stuffed from dinner, but we enjoyed a bunch of this as well! It was so fun reminiscing about the wedding and the past year we have spent together! He's such a fabulous husband!!

They had shows every night and they were great! We are sitting in the theatre getting ready for one to start! This boat was huge!!

These temples were amazing, and the intelligence they had when building these far surpassed their time!

Cozumel Beach Party!! We met some great people here, Ronnie and Allison, and we had such a blast with them our day on the beach!!

June 27 - Our Family of 2 became our family of 4!! Here I am with treats so excited to go pick up our newest additions!

The names of our new puppies are Kooper and Kole! (With "K's" of course). And here are our sweet trouble-makers!! Kole is on the left and Kooper is on the right!

Our newest picture of them...we have decided that Kole (in the front) looks a lot like Yoda with those ears!! They are such a great addition to our family and we are so happy to have these sweet things to come home too!!

Week of June 27 - July 3 (Yes...it only took him one whole week to finish this whole project!)

Kyle and I have really been wanting somewhere to sit out side. We have a little front porch and a little back porch (as you will see). We were wanting some more space to sit outside...especially with the new babies!!

So Kyle decided to build a deck...a small one of course, but once I got involved and he got brave, it became a little bigger than his original intentions!!

Here is the past 2 1/2 months summed up into one blog! I promise to try and post more often than this!! New pictures from my new class will be coming soon!! It's been an amazing summer and I have loved my time with Kyle! He is now back in school and I am getting ready to be back in mine!! Boy...summers get shorter and shorter every year! =)

Mountain Springs Elementary!!

This is where I will begin my new job in August! I just got hired today to start at the new elementary school in Cabot, AR!! It will hopefully be ready to move in by June, and I am so excited about beginning here!

I feel like this was definitely a lesson from God about working hard and how you must go down random roads to get to your destination! I did not get hired until August 8 last year. I had 10 days till the first day of school in Pre-K....a grade I knew nothing about! I then spent this whole year trying to figure out how to teach a Pre-K class and help these children grow and learn. I have loved every minute of it, and I love my babies.....but my heart was not content there!

When I found out about this new school being built, I began to question whether I should apply or not. Kyle and I began praying hard about what I was supposed to do! I felt like I should apply for it and let God do the rest. I went in for an interview and with God's blessing...they called with a position!

I have learned so much my first year of school, and I feel like God placed me at Westside to make a name for myself and meet people that would help me get this new job! My Lord is so good to me and taught me so much about being content in my position in life. I have also learned that God listens...no matter how long it takes for Him to answer... He is listening!!

Thank you Father for the blessings in our life! Thank you for 2 successful years of Medical School and for answering my prayers for a position You have pulled my heart towards!!

Anniversary Trip

The Carnival Triumph is what you see above. This is what Kyle and I will be boarding on June 21 this summer!! After the BIG Step test that Kyle will be taking on June 16...we will be home free for a nice vacation together! After that, we will only have a few weeks before Kyle begins "Year 3" of medical school. July 7 is the day he starts his clinicals, which will begin a crazy year of random hours and a lot of new adventures.

We figure before he starts his third year, we should begin on a good note....like a cruise for example!!

Wye Mountain Daffodil Festival

Kyle and I decided to spend Saturday morning at the Daffodil Festival on Wye Mountain before the weather turned bad! It could not have been better weather for our adventure!!

Kyle was able to get some shots of the different types of daffodils they had growing!!

The Daffodil Festival was a great time! It will be so much fun to go back again next year! We had a blast and it was a great start to our relaxing Spring Break!!

From there, we headed to Conway and ate at Stobys (so long over due)!! It was a great lunch before we headed to run some errands and then back home!! This Spring Break will consist of lots of relaxing together and home projects! We are looking forward to some peaceful, low stress time together. I will update on our projects over the week!!

She Awakens the World!!

So...I went to the Women's Event at New Life Church last night! It was called "She Awakens the World." The guest speaker there was Christine Caine...and she was amazing. She spoke such truth about how we live our lives full of excuses that keep us from following in the will of God. It was truly convicting to think about all the times I told God why I couldn't do something. I thought that I knew better then Him...as if He didn't already know what the outcome would be. She leads Equip & Empower Ministries and has a heart for human trafficking.

A Rainy Day in the Kitchen!

With all the nasty weather that was here today, I decided it was a good day to try this new recipe one of my pre-k parents gave me. It was called "Cake Balls"!! Here is how it goes:

1. You pick any cake of your choice. You can do one out of a box, but I figured with my spare time...what the heck?!?! I'll make it all from scratch...so I picked a chocolate cake. Here is the recipe:

1 cup and 3 tablespoons all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup white sugar
1/8 cup cocoa powder
1/4 cup shortening
1 eggs
1/2 cup milk

1/2 teaspoon vanilla extract

You mix all the dry ingredients together, then add the rest. Beat on low 1 minute, then on medium 2 minutes. Then you bake at 350 for about 25-30 minutes. This recipe has been cut in half, so it is only for 12 servings. (It still makes a lot!!) I used a 9x9 pan so it would not burn.

2. You can use 1/2 tub of icing of your choice, or make it from scratch. Here was the recipe I used for my chocolate icing:

1/4 cup (1/2 stick) butter or margarine

1/3 cup HERSHEY'S Cocoa

1 1/2 cups powdered sugar

1/6 cup milk

1/2 teaspoon vanilla extract

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. I also had cut this recipe in half so it would only make about 1 cup instead of 2 cups.

3. After all this is made and somewhat cooled off, tear the cake into crumbs and mix the icing together.

I realize it looks kind of gross, but it tasted wonderful!! From here, I just rolled it into balls and placed it on a baking sheet. Once you do that, you want to freeze them for about 1 1/2 - 2 hours.

4. Once they are frozen, melt almond bark, dip them in, let them cool and ENJOY!! They are wonderful (we also used the extra almond and threw some candy canes in to make peppermint bark!!) YUM!!

It was a fun day of trying new things!! Hope you had a wonderful rainy day as well!

My First Valentine's as Mrs. Basham

This was my first Valentine's as Mrs. Basham! This is a picture of Kyle and me in St. Louis in 2007! He got me tickets to see Anberlin...one of my favorite bands, for Valentine's Day 3 years ago! It was also on this Valentine's Day 3 years ago that he told me he loved me for the first time...and it's been bliss every since....

For this Valentine's Day....we spent the majority of the day just relaxing and enjoying some quiet time! We went to church this morning and heard a great sermon and I worked in Little Life Nursery for the second service. After that, we went to Furniture Row. We are on a hunt for a new dining room table and we have our eye on one! I'll update you if it comes true!! =)

We watched movies and napped all afternoon, and then got ready to go to my surprise dinner! While getting ready, I found this hidden in my bedroom....

It was a beautiful teardrop pearl necklace! It looks just like me and I absolutely loved it....and of course had to wear it that night!!

Here we are getting ready to head out to our dinner! Kyle took me to Brave New Restaurant. It was wonderful!! They had amazing food and it was very elegant! We had so much fun just enjoying good food and good company!!

My Valentine's Day was wonderful and I love that boy so much! It has been the most wonderful 3 years since our first Valentine's and a wonderful 1st one as

Snow Day....for 4 days now!!

I have officially been out of school for 4 days because of snow and ice in Cabot, and I will be out tomorrow because we already had that day cancelled! It has been a lot of fun....but I am getting over it quickly! I am a person of routine and schedule, so this begins to stress me out!

On Monday, Kyle and I went out to assess all of the snowfall from overnight....

You can see how deep the snow was from where I was walking! We were not expecting this at all.

So far this week, I have hung around the house cleaning and working on Valentine's for my kids! Kyle has spent all this time studying while I have gone and hung out with Chelsea, Susan and Hanna! It has definitely been nice to get to spend some time with these girls and be on my own schedule. However, I am definitely ready to see my kids at school again!

Organize Now!!!

Ok....so I am attempting to become even more organized in my life. I like to think of myself as a very organized person anyways, but I saw this book for sale at a book sale at our lounge at school. It breaks your life down into 7 different areas: yourself, papers, things, high-traffic areas, personal spaces, storage areas, and special events. I am super pumped to start reading it and finding out new ways to organize my life.

One of the ways in the "yourself" section to get better organized was to make a calendar of daily, weekly, biweekly and monthly chores and pick days to do them. So that is just what I did...I mark out days this month it would be impossible to do anything at home and worked around them! I am excited to see what else it does to help me lead a more organized life and not put everything off to the weekend!

The book is called "Organize Now!" by Jennifer Ford Berry!!

Sweethearts

Ok....so my all time favorite candy in the whole wide world is NECCO Sweethearts!! But...my heart has been broken this year due to the fact that Wal-mart and Kroger are no longer carrying the original Sweethearts. They now carry a new kind of conversation heart that is not nearly as good and does not have the white ones, which are the best ones! So...my efforts of finding the original Sweethearts had been lost....until today! The other Pre-K teacher, Jessica, and I were out shopping for some items for our classroom and I decided to take a gander down the candy aisle where we were....assuming I would only be disappointed!

But look what I found!! NECCO Sweethearts!! I was so pumped.....these are my favorite candies ever!! I was super excited....so excited I may have bought 3 bags!! But only so they would last me through the holidays!! Haha....

Now on to my next adventure....burning the calories off from eating all the Sweethearts! Kyle and I went this weekend and bought a Wii Fit! We had a lot of fun playing the games on it...but here is what I am starting tonight...

I am super pumped, yet nervous! I will let you know how it goes....I might die!!
